The original founder back in 2011 and highly qualified sommelier, Xabier first stepped into the kitchen in 2014, and we've struggled to get him out since! The fact that Xabier is self-taught, in combination with his unparalleled passion for innovative Spanish cuisine, dramatically influences the non-cliched, contemporary style of the daily changing menu, breathing new life into traditional elements of Spanish cookery. Not being afraid to take influences from other parts of the world, you can expect to find daring and vibrant combinations, hidden amongst deceptively simple-sounding dishes.
